This Spring and Summer, Yuzu's Head Chef presents the ocean's most precious gifts, rigorously handpicked from the pre-dawn auctions every Tuesday and Friday at Japan's famed Toyosu Seafood Market.

Like the first drops of morning dew, The Rhythm is a pristine prelude that awakens the palate with pure, delicate notes. The performance begins with the refreshing coolness of Mozuku brown seaweed, paving the way for the gentle, succulent sweetness of young Sea Bream (Sakura Dai)—the iconic fish of the Japanese spring.

Punctuating the journey is a delightful contrast: the crisp bite of Scallop (Hotate) intertwined with a layer of fluffy, airy Cappuccino Soup.
