What Makes the Autumn Menu at Yuzu Omakase Special?

Autumn marks the primary harvest season in Japan, a time when both seafood and agricultural produce reach their peak freshness and flavor profile. The new Autumn Menu at Yuzu Omakase highlights three core ingredients:

  • Mikandai Red Sea Bream (Ehime): Red sea bream raised on a natural diet blended with Mikan mandarin peels. The fish features a deeply sweet flavor, complete absence of fishiness, and a subtle citrus aftertaste.
  • Kurobe Koshihikari Rice (Toyama): Premium rice cultivated with pure snowmelt water from the Northern Japan Alps. The grains are soft, glossy, naturally sweet, and best enjoyed at the optimal serving temperature of 30–37°C. Notably, this high-grade rice is directly imported and served exclusively at Yuzu Omakase.
  • Mikan Mandarin (Ehime): A citrus fruit with a perfect balance of sweetness and acidity, crafted to elevate and balance the dish's flavor profile.
