It’s shokuyoku no aki - “the season of appetite”
In Japanese culture, autumn is often called shokuyoku no aki - “the season of appetite”. It is the time when nature feels complete: fish grow rich with flavor, mushrooms reach their most fragrant state, and seafood arrives at its peak. The Japanese believe that when the Momiji leaves turn red, the palate awakens too - becoming more vivid, more eager to embrace new tastes.
With this spirit, Yuzu Omakase presents the seasonal omakase - Autumn Menu 2025 in Ho Chi Minh City - four journeys where Japanese philosophy meets the artistry of seasonal cuisine.
Lunch can be light and graceful, yet still deeply satisfying. The Rhythm embodies the idea of “less, yet complete”. Fresh Shima Aji, sweet Hotate scallop, and Masaba mackerel form a clean, seasonal trio. The surprise comes with a silky Foie Gras Chawanmushi, before closing on the warmth of premium Wagyu Udon. A “mini journey” - just enough to refresh the afternoon.
The Moment captures autumn in its purest colors. Momiji Dai, glowing red like Momiji leaves, alongside Kamasu and crisp Tsubugai shellfish, create a picture of the season in transition. Balanced with rare Wagyu Misuji and the tuna trio - Akami, Chutoro, and Otoro - this menu strikes harmony between freshness and indulgence.
Japanese cuisine has always been about harmony: ocean and forest, lightness and depth. The Journey takes guests across both landscapes - from Ishigakidai and Nama Sujiko to Shiro Ebi & Sakura Ebi, then shark fin with Masaba. Each course feels like a stop along the way. The crescendo arrives with buttery Otoro paired with Matsutake, Japan’s “king of mushrooms”, evoking the festive spirit of autumn.
Some experiences are meant to be unforgettable. The One Menu brings together the season’s most treasured jewels: Botan Ebi, decadent Nodoguro, Bafun Uni with Hokkaido Kegani crab, and a 12-year-aged Osciètre caviar. The finale is both elegant and celebratory - Akami Gold with Truffle, and the richest Otoro with Matsutake.
