The Taste of Impermanence
Inspired by Japan’s coastal bounty and Vietnam’s soulful warmth, the Summer Menu 2025 is a multi-layered symphony of sensations - you will get on the journey where the heat flicker in the seared Hotate will be softened by a warm clam broth that lingers gently on the palate, then lifted by the citrus brightness of Yuzu not Yuzu dessert.
Summer, like a great omakase, is an experience best savored in layers. From cooling lightness to deep umami, from softness to intensity, each dish is told through temperature, texture, and restraint.
Three Menus. Three Ways to Feel Summer.
Summer never stays in stillness, just as Yuzu Omakase captures it this season through four thoughtfully crafted menus: The Rhythm, The Moment and The Journey. Every ingredient is chosen with care, and every dish is a step in a journey meant to be remembered.
1. The Rhythm
The gentle beginning. This is where textures are clean, flavors are subtle, and the space between each course is as meaningful as the food itself. Like Wagyu Oyster with tender wagyu combined with fresh Japanese oyster for a luxurious contrast in texture and flavor, or Unagi, a traditional eel preparations that bring deep umami and smoky notes. A gentle welcome that sets the tempo for the season ahead.

2. The Moment
The bloom. Bold, expressive sensory. Here, ingredients are at their most peak, and the plates reflect that intensity - not through excess, but through precision. Experience The Moment for Bafun Uni - Rich and velvety sea urchin that melts in your mouth. Nothing is heavy, but everything is alive.

3. The Journey
The intention seeker. The journey is longer with 22 courses, you will be led from tender snow crab in a rich miso of Zuwkakani Nabe, luxurious Bafun Uni Toast with premium uni, truffle, and shimmering gold to Misuji Wagyu arranged like Mount Fuji on stone. This menu holds every detail of care, finesse, and understated indulgence.
